Easy Buttermilk Biscuits

Comfort food at its best. Warm fresh-from-the-oven biscuits! All you need is a little butter and jam or honey. Biscuits will keep for...well, never mind. You won’t have to worry about that.

  • 2 cups flour
  • 1 t salt
  • 2 t baking powder
  • 6 T very cold butter
  • 1 c buttermilk

Preheat oven  to 450.

  1. On a cutting board, chop butter into tiny pea size pieces; stick it in the fridge so it will stay cold.
  2. Mix flour, salt, baking powder and whisk together well.
  3. Get butter from the fridge and crumble it into the flour mixture. Using a pastry cutter or your fingers, quickly work butter into flour until it is a sandy consistency.
  4. Make a well in the center and add buttermilk. Stir until just combined, it will look lumpy and messy at this point but don’t over-mix.
  5. Dump onto a well-floured surface and gently flatten and fold 5 or 6 times. Gently roll out about 3/4” thick and cut out biscuits with a biscuit cutter or a drinking glass. Place in a pan with sides of biscuits touching.
  6. Bake 10-15 minutes, or until golden brown on top.
