Easy Buttermilk Biscuits
Comfort food at its best. Warm fresh-from-the-oven biscuits! All you need is a little butter and jam or honey. Biscuits will keep for...well, never mind. You won’t have to worry about that.
- 2 cups flour
- 1 t salt
- 2 t baking powder
- 6 T very cold butter
- 1 c buttermilk
Preheat oven to 450.
- On a cutting board, chop butter into tiny pea size pieces; stick it in the fridge so it will stay cold.
- Mix flour, salt, baking powder and whisk together well.
- Get butter from the fridge and crumble it into the flour mixture. Using a pastry cutter or your fingers, quickly work butter into flour until it is a sandy consistency.
- Make a well in the center and add buttermilk. Stir until just combined, it will look lumpy and messy at this point but don’t over-mix.
- Dump onto a well-floured surface and gently flatten and fold 5 or 6 times. Gently roll out about 3/4” thick and cut out biscuits with a biscuit cutter or a drinking glass. Place in a pan with sides of biscuits touching.
- Bake 10-15 minutes, or until golden brown on top.
