Knife skills and Minestrone Soup

You don't eat Minestrone with a knife, but you definately need one to make it! Especially this one, chock full of chopped vegetables. My second dish for the Rouxbe cooking course was minestrone soup. It made a lot of soup - I probably should have halved the recipe, but I really like giving food away and I was able to give a large container my friend's daughter, who was wondering if her groceries would last until payday. "Umm, do you like minestone soup?"
