Salad Lyonnaise

I love a good salad. So fresh, so healthy, loaded with fresh greens, homemade croutons, bacon...bacon is healthy - right? Well, you won't really care once you sink your teeth into this very French salad with it's rich, tart Dijon dressing (made with bacon drippings, no less!)

When we were traveling in France, I would often have a salad for lunch. Now, the French know how to make a salad. Often chocked full of meat or cheese or  potatoes. A few of my favorites: salad with warm goat cheese toastsduck gizzard saladSalad Niçoise... But back to the Salad Lyonnaise, which I never actually had until last night.

Prepare a bed of simple greens, add toasted croutons, chopped, crispy bacon, a Dijon dressing (recipe below), and top with a poached egg. Be sure the yolk is kind of runny because then you get to cut into the egg and let the gooey, unctuous yolk mingle with the greens and dressing, and you will surely swoon when you take a bite of this lovely little salad that you just created with your own hands. And your very own homemade dressing.

What's the take away here? Make your own dressing. It's easy, it's cheap, it's fresh. Most importantly, you know exactly what's in it. Oh - and that 8 oz jar of salsa or pickles? Keep the jar when you are done - it’s the perfect size to mix your next amazing vinaigrette!




Dijon-Bacon Dressing

2 tbsp Dijon mustard 
2 tbsp white or red wine vinegar 
2 tbsp reserved bacon fat
2 tbsp extra-virgin olive oil 
1/8 tsp freshly ground black pepper
1/8 tsp kosher salt
1/8 tsp sugar

Toss everything into a jar and shake to mix.
