Hasselback Potatoes

Boiled, steamed and now roasted! These oven-roasted potatoes got nice and crispy in a cast iron pan...and they look so pretty! All those little crevices are perfect little niches for things like butter, garlic, parsley.  How about you cook up some pancetta and crumble over top, too?
